We have enjoyed my daughter’s Crockpot Taco Soup for years but I never made it myself until now. I don’t know why I waited because we love it and it’s so easy to throw together.

Anytime we can enjoy a budget-friendly meal which is also a one-pot dinner packed with flavor, you can count on it appearing on our menu plan for a long time to come.

7 ingredient taco soup recipe comes together in minutes. My easy recipe has; Black Beans, Corn, Tomatoes, Tomato Soup, Ground turkey, Taco Seasoning and Water.

You just dump the Black Beans, Corn, Diced Tomatoes and Tomato soup into the Crockpot and stir well. While this is heating up, brown and drain the meat. 

Make this easy Taco Soup Recipe any time of the year. It’s a hearty meal to serve in the winter during soup season. My family enjoys having tortilla chips on the side and having leftovers for lunch the next day.

Stir in the last three ingredients, place the lid on the Crockpot and go read a book!

Dinner will be ready in about 2 or 3 hours. Ok, well it’s really ready in two hours but you can turn the Crockpot down on low and let it simmer for several hours if you need to.

I use Reduced Sodium Black Beans and I also use Basil, Garlic, and Oregano-flavored tomatoes which is an easy trick for using fewer ingredients while not sacrificing flavor. There is no salt added because corn, soup, and taco seasoning have plenty of salt. Finally, if you want a really strong taco flavor, cover the meat with the second package of taco seasoning while it is cooking.

Crockpot Taco Soup

Crockpot Taco Soup is ready to eat in just a couple hours with only 7 easy ingredients.

Cook Time 3 hrs
Total Time 3 hrs 10 mins
Servings 4 people


  • 1 15 oz. can Black Beans Do not drain
  • 1 15 oz. can Whole Kernel Sweet Corn Do not drain
  • 1 10.3 oz. can Tomato Soup
  • 1 14-15 oz. can Diced Tomatoes
  • 1 lb. Ground turkey Ground beef would be fine also
  • 1 pkg. Taco Seasoning
  • 1 Cup Hot Water


  • Set your Crockpot onto high.
  • Pour the first four ingredients into the crockpot and stir to blend.
  • Brown and drain the meat.
  • Add meat, seasoning and hot water to the pot and stir well to blend.
  • Place the lid on the Crockpot and cook about 2 or 3 hours.
  • Serve and enjoy!

I wanted to comment on gallstones. you left a comment on Vanessa’s blog about your gallstones. since I hosted the Dishing It & Digging It link party that week, I am the one with the gallstones…LOL I appreciate your feedback on the matter. It is quite scary when you think you are having an heart attack.

    1. Hi Linda, that is exactly what happened to me. Since I’ve never had a heart attack, I didn’t know what it felt like but at the time, that amount of pain seemed sufficient. My gallbladder was removed shortly after that incident, no more problems.
      The Taco Soup is scrumptious. I can’t believe I waited so long to learn to make it.

  4. Crockpot Taco Soup has been a family favorite for years. I usually make it with ground beef or sometimes I make it vegetarian. I’ve never tried it with ground turkey and can hardly wait to try your daughter’s version. Sounds delicious for a cold winter night (if it ever turns cold – lol). But, then again, I eat soup all year long. Looks yummy!

    1. My hubby would probably faint if I left the meat out of any soup. I tried that one day last week and he cracked me up laughing at him about it.
      Actually, this is my version, my daughter makes hers slightly different with different beans and a couple of other steps. Sometimes, she doesn’t add the tomatoes since the children balk about them.
      I’m like you, I could eat soup all year also.

    1. Oh yes, it does smell yummy while cooking. We will be having Taco Soup often now that I know how and we love it so much. It’s certainly easy to prepare with only 7 ingredients!
