Once Candy corn starts appearing in stores, we know Fall is getting close. There is no actual candy corn in this recipe but we make the traditional Rice Krispies Treats and shape them to look like candy corn using a pie pan. Then we dip the top and bottom in orange and yellow candy melts. So easy and yummy too.
Why Rice Krispy Treats?
Because they are not only addictive, you cannot eat just one but they are so easy to make. A no bake dessert that doesn’t require any special tools to make. If you have a kitchen and you cook in it, you certainly own some bowls and also a big pot plus a stirring spoon or spatula. Tools Used
- one large saucepan
- two small microwave-safe bowls
- long wooden spoon
- two 9 inch cake pans or pie pans
- parchment paper
- large measuring cup, like this
Ingredients
- 1/2 cup of butter
- 10 oz mini marshmallows
- 6 cups of Rice Krispies cereal
- 1 tsp vanilla extract
- 2 cups of yellow candy melts
- 2 cups of orange candy melts
Directions
1.
Spray two 9 inch cake pans with non stick cooking spray and set aside. Cover a workspace on your counter with parchment paper or disposable counter covers, like these.
2.
In a large saucepan, add the butter and melt over low heat until completely melted. Then add the 6 cups marshmallows to the melted butter and stir constantly until completely melted. Now add the vanilla and stir. Then add the 6 cups of Rice Krispies cereal to the melted marshmallow mixture and stir until well mixed together.
TIP: Stir with a wooden spoon you have sprayed with non-stick cooking spray.
3.
Now, divide the cereal mixture into both prepared round pans. Then flatten out evenly your hands or the bottom of a glass. TIP: You can spray your hands with non-stick spray first to flatten by hand. Do not pick tight, just flatten. You want the ooey gooey marshmallows in these delicious treats.
 4.
Place in the fridge for 30 minutes to 1 hour. Then remove and allow the Rice Crispies Treats to sit on the counter and come to room temperature while you melt the candy melts for decoration.
5.
Place candy melts in different microwave-safe bowls with yellow melts in one and orange melts in the other. Then, one color at a time, set the microwave-safe bowl into the microwave and melt the candies on high heat, stirring every 15 seconds until almost completely melted. Stop heating when the candy melts are almost all melted. Remove from the microwave and continue to stir as the residual heat finishes the melting process.
Do not overheat. If the candy is too thick, add vegetable shortening or vegetable oil in 1 teaspoon increments, up to 1 tablespoon, and stir well.
6.
Now, flip the cake pans over onto your parchment paper work surface and the Rice Krispie circle should be able to come right out, If not, use a knife to run along the edge of the circle and it should come loose and fall out.
Slice like cutting a cake into six even triangles.
7.
Now, dip the pointed end of each triangle Rice Kripsy Treat into the melted yellow candy and scrape off any excess using a butter knife. Then turn it around and dip the top piece (the wide end) into the orange melted candies and scape off excess. Lay on the parchment paper to dry. Then continue the process until all six candy corn rice krispie treats are done.
Last step
Allow your adorable Candy Corn Krispie Treats to harden while the melted candy cools for about 10 minutes. Serve and enjoy!
