After more than 45 years of homemaking, I have learned a few things about cooking that I enjoy sharing on this blog. Today, this recipe I am sharing is one my hubby enjoys baking. We love to work together in the kitchen sometimes. ~wink
My husband came across this recipe on Facebook when his Aunt shared it a few years ago. He has made these many times since then and recently tweaked the recipe just a bit for a softer biscuit.
Our grandson was invited to a game day party recently. He was asked to bring a dish. He requested that his Papa make a batch of these Blueberry Biscuits. Of course, Papa did just exactly that, and the guys left no crumbs, we are told. This recipe is a winner!

Directions for Sweet Blueberry Biscuits
Step 1 Prepare
Preheat your oven to 450°. Prepare your large baking pan with parchment paper, a silicone mat, or non-stick spray.
Prepare a floured work surface on your kitchen counter. I use these disposable counter covers for easy cleanup.
Step 2: Freeze the butter
Cut your butter into very small cubes. Pour a pinch or two of flour into a small bowl and roll the butter cubes in the flour to coat and prevent them from sticking to each other. Set this bowl in the freezer while you prepare the dough.
Step 3 Dry Ingredients
In a large bowl, add the dry ingredients: salt, sugar, flour, and baking powder, then blend with a whisk.
Step 4 Wet ingredient
Slowly add the buttermilk to the dry ingredients while incorporating it, mixing by hand. At this point, you are creating your dough. Your dough should be sticky.

Step 5: Blend the butter
Next, add the cold butter. Remove the bowl with the butter cubes from the freezer and remove the butter cubes from the flour in the bowl. Discard the excess flour.
Important step. Now sprinkle about 1/4 cup of flour onto the sticky dough and toss to coat the entire dough ball so that it isn’t quite so sticky. NOW, add the butter cubes and incorporate them into the dough by hand. Add more sprinkles of flour as needed because the dough may get too sticky for kneading.
Step 6: Add the blueberries
Carefully work the blueberries into the dough. Knead carefully so as not to smash the blueberries.

Step 7: Roll out the dough
Now turn your dough out onto a floured surface. I use these disposable counter covers for easy cleanup.
Roll your dough out to the desired thickness using a rolling pin or work it out by hand if you don’t have a rolling pin. A thickness of about 1/8″ is what I do.

Step 8: Cut into biscuits
Use a biscuit cutter or the rim of a small glass to cut your biscuits to the desired size. Place each biscuit about 1/2″ apart onto your prepared large baking pan. Bake in a preheated oven for about 7 to 12 minutes or until nice and golden brown.
We get about 18 biscuits because I cut them with the rim of a small glass. The amount of biscuits you get will depend on how large you cut your biscuits.
While the biscuits are baking, make your glaze and set it aside.
TIP: If you place your biscuits on the baking pan with sides touching, you will get taller, fluffier biscuits. We like these blueberry-glazed biscuits to be a little thinner.

Step 9 Bake
In a small microwave safe bowl, melt 1 tablespoon of butter in your microwave and gently brush onto the top of the hot biscuits when you remove them from the oven. Then add the glaze once the biscuits have cooled slightly.

How to Make the Glaze
Add the powdered sugar to a medium-sized bowl. Stir in the vanilla and lemon juice, using a small whisk, until there are no lumps.
Use a basting brush to coat the tops of the blueberry biscuits with the sweet glaze. Serve and enjoy!
If your glaze is too thin, add a pinch more of powdered sugar. If your glaze is too thick, add a drop more of lemon juice.

Serve these sweet glazed Blueberry Biscuits for dessert, Mother’s Day Brunch, or party food. You may want them as a sweet treat anytime. We make them for dessert any time of the year at our house.
I have heard some folks say these remind them of Bojangles Bo Berry Biscuits. I just know these sweet buttermilk blueberry biscuits coated with that vanilla glaze are hard to stop eating. Our grandson ate four at one sitting!

TIPS
For taller biscuits, place them onto the baking pan with sides touching.
Freeze your blueberries before use. Although I have not tried making this recipe with frozen blueberries, I understand it works. Let me know if you try that. We love the taste of the fresh blueberries.
You can also shave your frozen butter into the dough rather than using small cubes. We are fine with the cubes. It’s less work.
You can either brush on the glaze with a pastry brush or pour it over using a measuring cup with a lip for pouring.
