We are taking the basic Pimento Cheese Sandwich to new heights with this Bacon Grilled Pimento Cheese with Pepper Jelly Sandwich!
Although Winter is not officially here for several more weeks, the cold and snow has already begun in many places. Along with staying indoors comes some seasonal menu items in most homes such as soups, stews and family favorite sandwiches.
My husband and I recently spent a few days at Hilton Head S.C. While there we ‘experienced’ this sandwich at a local restaurant. They called it the “Ooey Gooey” on their menu. Of course this place made their own Pepper Jelly AND their own Pimento Cheese. We would not expect anything less. Let me tell ya, that sandwich was divine! So true to form for us, we tried to replicate it after we came home. This is our own rendition. Let us know if you try this and how you liked it!
First you simply must make your own Pimento Cheese spread! (I suppose you could use store bought or pick some up from your favorite deli) Here is my husbands recipe.
Pimento Cheese Sandwich Spread
1 1/2 Cups Mayonnaise (We prefer Dukes)
4 oz. diced pimento, drained
1 tsp. finely grated onion
1/4 tsp. ground red pepper
8 0z. sharp Cheddar cheese, finely shredded
8 oz. extra-sharp Cheddar cheese, shredded
Mix the first 4 ingredients well in a large bowl. Add the cheese and stir well. Store in an airtight container in refrigerator.

To make the sandwich, spread the desired amount of the pepper jelly on one side of the bread, on top of that spread a generous amount of pimento cheese. Place the prepared bacon slices on top of the pimento cheese and grill open faced until the bread is golden brown. Place the two sides of the sandwich together and serve!
We use turkey bacon but you can use whichever you prefer. It just so happens that I canned some Pepper Jelly last summer which is what we used. There is no such thing as the sandwich police, so you go ahead and cook yours with whatever spread you desire, even if that is grape jelly! Be sure to come back and tell us about it though!
