Menu Plan #39 More Budget Stretcher Savings
Since we introduced Budget Stretcher Savings to our Menu Plans several weeks ago, it has been a joy to see the savings on our grocery budget. Because of the success we have had with our Budget Stretcher ideas, we have even more menu option plans in progress for the weeks and months to come.Â
What are Budget Stretchers? Find out here.
Skillet Cabbage, Rice & Sausage One Dish Dinner
This is a scrumptious hearty stick-to-the-ribs one dish dinner and it makes plenty for leftovers the next day.Â

Rotisserie Chicken and Fixin’s
Our grocery store has Rotisserie Chicken on sale and I have a coupon! There will be enough to make Chicken Salad for sandwiches on Thursday for some real budget stretcher savings! I am cooking for two so one chicken is enough for us. Even if you need to buy two chickens to pull off these two days of meals, it is still a budget stretcher at only $4.99 each already cooked.
Our side will be Homemade Creamy Cole Slaw which we love at our house. It’s so easy to prepare with only 4 ingredients one of which is a bag of slaw mix.
Pecan Honey Mustard Rotisserie Chicken Salad Sandwiches using leftover Rotisserie chicken from Wednesday. Our side dish will be these Oven Baked Sweet Potato Chips.Â
I use a Stovetop griddle like the one above for our Grilled hot dogs and our Grilled Cabbage steaks.
If you are a regular at this blog, you know we are addicted to hot dogs and even share our own little Hot Dog Tour. While grilled hot dogs are great, we enjoy them cooked on the stovetop griddle even better.
Go ahead and grill the buns for a nice treat and if your family enjoys grilled onions toss those on the griddle too.
Our side dish will be the remaining Homemade Creamy Cole slaw we made for Wednesday’s menu.
