Christmas Rice Krispies Treats Recipe

I can still remember when my mother made rice crispy treats for my brothers and I when we were children. We thought it was simply the best homemade dessert outside of her chocolate cake. The best part for us was of course that it was sweet but also that it was made with a box of cereal we already loved.

This classic rice krispie treats recipe for cereal bars is made special for the holiday season. A cute Christmas dessert is ready in minutes, with no baking and little clean-up.

Step 1

Prepare a 13 x 9 baking sheet with parchment paper or wax paper. If you feel especially wild, spray the baking pan with cooking spray and skip the parchment paper.

Step 2

Melt butter in a large saucepan over low heat. When the butter is melted, add the marshmallows and melt, stirring constantly. Remove the saucepan from the heat.

Fold the cereal into the melted marshmallow mixture and pour in 1 cup of white chocolate morsels, and 1/2 cup of crushed peppermints. Stir until the cereal is coated in the marshmallow mixture.

Tip

I like to spray a wooden spoon with non-stick cooking spray and use it to stir the marshmallow mixture.

Step 4

Use the back of a wooden spoon or spatula that has been sprayed with non-stick cooking spray to press the mixture evenly into your baking pan. Use firm pressure to press the mixture down. You won’t hurt these cereal treats. Cool completely.

Cut the crispy treats into about 8 to 12 bars. You can cut them any size you want such as long rectangles or squares. You will get more of a yield if you cut them into small squares.

Step 6

Place white chocolate morsels in a microwave-safe bowl. Melt on high heat, stirring every 15 seconds until almost completely melted. Stop heating when the white chocolate chips are almost all melted. Remove from the microwave and continue to stir as the residual heat finishes melting the candy chips.

Do not overheat. If the candy is too thick, add vegetable shortening or coconut oil in 1 teaspoon increments, up to 1 tablespoon, and stir well.

Spread the melted white chocolate chips over about โ…” of each of the rice krispie squares and decorate with additional crushed peppermints or sprinkles.

Allow your easy Christmas rice krispies treats to dry completely before serving.

  • 1 (10-ounce) package of miniature marshmallows
  • 3 Tbsp butter (Do Not use margarine)
  • 2 cups white chocolate morsels, divided
  • ยฝ cup finely crushed peppermints, plus additional for decorating
  • Christmas sprinkles, for decorating (optional)

Notes

You can store your homemade rice crispies treats in an airtight container on the counter for a couple of days.

Substitute one 7 oz. jar of marshmallow creme for the miniature marshmallows.
