This weeks Menu Plan is all about One Dish Dinners.
We did a pretty good job of following our Menu Plan last week. It has been such a load lifted not to have to think about dinner every single day since I began Meal Planning.
Our first week on the Menu Plan
Our grandson’s high school baseball team wound up having a double header playoff game on Thursday. We traveled the 45 minute drive to watch both games so dinner was actually grilled burgers at the ball park on Thursday. Our team won both games! There is one more game this week, not sure which day yet but we will adjust our schedule accordingly.
Sunday: Chicken & Dumplings
You can’t beat a good Sunday dinner at home! My Chicken & Dumplings recipe isn’t on the blog yet but hopefully it will be soon. Spoiler alert, I cheat with the dumplings. We’ll be saving broth and chicken for Monday’s dinner.
Monday: Chicken Pot Pie
A homemade chicken pot pie is comfort food at its best! The ingredients are simple, only 7. We’re using fresh broth and chicken prepared from our Sunday dinner.
Tuesday: Pork Chop Casserole with Green beans and crescent rolls
Only 3 main ingredients to this old family favorite. In all honesty, I make this on busy days sometimes and serve it with crescent rolls and no other side.
You could make this dish in the crockpot but it would only take maybe 2-3 hours.
Wednesday: Taco Chicken & Black Bean Bake with tortilla chips
This is one of my freezer meals so no work involved for me today. You can prepare and bake on the same day though. Just skip the freezing and go straight to the oven. If you’re serving this dish to guest, a garden salad is a nice addition.
Thursday: Broccoli & Sausage Macaroni Casserole
Only 7 ingredients, 2 hours and the crockpot are all you’ll need for this flavorful meal.
Friday: Crockpot Black Bean Chili and waffle iron cornbread
The secret to my chili is the combination of meats with both ground sausage and ground turkey. Plan ahead to have leftovers for the weekend. This Black Bean Chili is perfect for that!
Saturday: Leftover chili and cornbread
So glad we don’t have to cook on Saturday!
