High temps and hot weather has brought out our Lighter Food Menu Plan with simple meals, lots of salads and favorite sandwiches.
Here in the deep south, we have ‘feels like’ temps based on the humidity. We’ve already reached triple digits in our ‘feels like’ temps and it’s early June! Just like we look forward to soups in the fall, we are glad to break out the salads and sandwiches in the summer.
If you’ve been following my menu’s, you know how much I love the Cook Once Eat Twice idea. I’ll prepare enough chicken on Sunday for our sandwiches on Monday. You can easily buy a Rotisserie chicken from the grocery store.
We’ll be enjoying sandwiches with ours but you could also serve it on a bed of lettuce.
This salad makes frequent appearances on our summer menu because we L-O-V-E it!
