Sausage and Veggie Stuffed French Bread Breakfast Recipe
French Bread stuffed with sausage and veggies creates a delectable breakfast. This easy, hearty meal comes together quickly.
Hollowed-out French Loaf is stuffed with a savory combination of sausage and vegetables, combined with creamy eggs and cheese. Then baked for a nice hot flavor-filled, hearty breakfast. This meal will quickly become a family favorite.
My husband came up with this recipe after seeing a similar idea online recently. One of the great things about home cooking is taking a recipe and making adjustments to flavors your own family will enjoy. We spend a lot of time in the kitchen together creating something good to eat.

Ingredients
- 4ย large eggs
- 1/2ย cupย sharp shredded cheese
- 1ย small onion, sliced thin
- 1ย cupย sliced fresh mushrooms
- 3/4ย Cupย sliced Cherry tomatoes
- 1/2ย Cupย Half-n-half
- 1/2ย lb.ย ground sausageย cooked, crumbled, and drained
- Salt & Pepper to taste
- 1ย large French Loaf
Sharp-shredded cheddar cheese is a perfect pairing with eggs. You can substitute any flavor of shredded cheese you might like. Mild cheddar is also good. Parmesan or Mozzarella are good choices as well.
Onions are optional, so feel free to leave them out if you prefer. If you do use them, sweet varieties like Vidalia onions from Georgia offer a mild, sweet flavor, while yellow onions bring a stronger, more pungent taste.
Mushrooms give the slightest little soft texture, and are quite delicious when paired with scrambled eggs. White mushrooms work well in this recipe, but Baby Bella mushrooms are even better.
Cherry tomatoes give this meal not only color but a nice flavor. Surprisingly, eggs and tomatoes pair well, and it is another vegetable you get to add. Cherry tomatoes hold up well in the baking process for this recipe. Baking brings out the flavor of tomatoes.
Ground sausage can be substituted with cooked, crumbled bacon if you like. We prefer sage sausage, but you might like hot or mild sausage.
French Bread is perfect for this recipe because it holds up well after being hollowed out. The bread creates a boat to hold all of the yummy ingredients. Be careful not to hollow out too deep so that your egg mixture seeps through to the bottom of the pan.

Step 1
Preheat your oven to 350ยฐF. Line a large sheet pan with parchment paper.
Step 2
Brown the sausage in a large skillet. Drain the grease off using a colander set over a bowl.
Step 3
In a large bowl, whisk the eggs. Then add the cheese, onions, salt and pepper, and mushrooms to the eggs. Stir to combine.
Now, add the cherry tomatoes, half-and-half, and sausage to the egg mixture and fold well until the mixture is completely blended.
Step 4
Place your French loaf onto the prepared baking sheet. Hollow out the loaf to create a ‘well’ in the center of the bread.
Step 5
Pour the egg and veggie mixture into the center of the hollowed-out French bread. Then, carefully place the baking pan in the oven on the center rack. Set your time to 25 minutes. Because oven temperatures vary, you might want to check your breakfast loaf earlier. It takes 25 minutes in my oven.
You can cover with foil to prevent the bread from burning and continue to cook if your oven cooks slowly.
Remove from the oven. Carefully slice into four sections. Serve and enjoy!
