Ingredients
4large eggs
1/2cupsharp shredded cheese
1small onion sliced thin
1cupsliced fresh mushrooms
3/4Cupsliced Cherry tomatoes
1/2CupHalf-n-half
1/2lb.ground sausagecooked, crumbled and drained
Salt & Pepper to taste
1large French Loaf
Instructions
Preheat your oven to 350°F. Line a large sheet pan with parchment paper.
Brown the sausage in a large skillet. Drain the grease off using a colander set over a bowl.
In a large bowl, whisk the eggs. Then add the cheese, onions, salt and pepper, and mushrooms to the eggs. Stir to combine.Now, add the cherry tomatoes, half-and-half, and sausage to the egg mixture and fold well until the mixture is completely blended.
Place your French loaf onto the prepared baking sheet. Hollow out the loaf to create a ‘well’ in the center of the bread.
Pour the egg and veggie mixture into the center of the hollowed-out French bread. Then, carefully place the baking pan in the oven on the center rack. Set your time to 25 minutes. Because oven temperatures vary, you might want to check your breakfast loaf earlier. It takes 25 minutes in my oven.NOTE: You can cover loosely with foil to prevent the bread from burning and continue to cook if your bread appears to be getting brown before the eggs are set.
Remove from the oven. Carefully slice into four sections. Serve and enjoy!
