It is still baseball season which means this menu is a Crockpot week at our house. I don’t know about you, but I adore my Crockpot.
We will be running out the door to baseball games a couple nights a week for a few more weeks just as I’m sure many of you will. We simply can’t blow the budget eating out!
We enjoyed one of our grandson’s high school games this week which went into extra innings and ended after the 12th inning around midnight!
I serve mine on a bed of rice along with some Hawaiian rolls.
We love this recipe at our house and need no excuse to enjoy it. Taco Tuesday is a great time for an easy Crockpot recipe.
It’s time for a Budget Stretcher and this dish is it! Not only is it packed with flavor but my recipe makes enough for us to have two meals.

Our side dish will be a Baked Sweet Potato.
We used to only cook with apples during the Fall but we can get them any time of year now and I love incorporating apples into my recipes.
