Key Lime Cake with Key Lime Cream Cheese Frosting

My husband, Stacy has developed a love of baking and a reputation for being a good baker among our family and friends. 

Two of his most requested are this Key Lime Cake and his Strawberry Cake with Strawberry Buttercream Frosting.

Confession time! Stacy bakes the cakes and makes the frostings but he prefers me to frost and I usually frost them. I consider that to be the fun part. I love it because he’s usually cleaning up while I’m frosting the cake.

I shaved the peeling from fresh limes and used the shavings to decorate this Key Lime cake and then added a few fresh pecan halves. Living in Georgia where pecans are abundant, we put pecans in and on everything! 

Ingredients

  • Box lemon cake mix
  • 1 1/3 cup vegetable oil
  • 4 large eggs, beaten
  • 1 (3 oz.) pkg. lime gelatin
  • 3/4 cup orange juice

How to make Key Lime Cake

Step 1

Preheat the oven to 350. Grease and flour two round cake pans.

Step 2

In a large mixing bowl, blend together cake mix, oil, eggs, gelatin, and orange juice on medium speed until smooth and well blended.

Step 3

Pour the batter into your prepared cake pans.

Step 4

Bake according to box mix directions. The cake is done when a toothpick inserted into the middle comes out clean.

Allow the cake layers to cool completely before frosting.

An easy recipe for a scrumptious, moist Key Lime Cake with Key Lime Cream Cheese Frosting.
Ingredients
  • 1 box lemon cake mix
  • 1⅓ cup vegetable oil
  • 4 eggs
  • 1 (3 oz.) pkg. lime gelatin
  • ¾ cup orange juice
Instructions
  1. Mix together cake mix, oil, eggs, gelatin and orange juice until smooth and well blended.
  2. Pour into three 8" prepared cake pans.
  3. (We like to grease and flour the cake pans rather than spray them)
  4. Bake according to package directions on cake mix box.
  5. Cool and frost.

  8. I grew up in a pecan orchard and my mom and dad still harvest lots of pecans (about every other year) and always freezes some for me. I have to say that GA pecans are the best!

    Limes are such a favorite of mine. I always get water and lime instead of lemon when dining out. That’s why I know I’d jump mouth first into that beautiful cake. I can almost taste it now. This will definitely be made at my house soon. It looks so yummy!

    1. I wish we had pecan trees in our yard! We do have some friends who give us pecans that we freeze. I’d put pecans in almost everything that I could and if pecans are not appropriate, then maybe onions would be! LoL Two of my favorite ingredients, both grown in GA. 🙂

    1. I think among Stacy’s cake recipes, this is one of the least trouble to make. It ranks at the top of the list of most requested and there is never leftovers.

  10. Shirley, this looks delicious. I love that it starts with a mix. That always makes baking easier and that’s my kind of baking! I would never have thought to use orange juice in the mix. I love key lime pie, so I’m going to give key lime cake a try. Pinning to remind myself to make this one!

    1. I know, right! I love scratch cakes too but this one is a lot less trouble and just as good as a scratch cake! My hubbby loves Key Lime pie too which is why he knew he would love the cake the first time he made it. Thanks so much Beverly.
