Roasted Apple Pork Tenderloin Easy Recipe
An easy recipe for a hearty meal featuring the pairing of apples and pork. Our tenderloin is basted in flavorings then drizzled with Maple syrup. The apples and onions are also drizzled with Maple syrup for a delectable treat.
Ingredients
- 2-3 lb Pork Tenderloin
- 1/4 Cup Packed light brown sugar
- 2 Tbsp. Yellow Mustard
- 1/2 Cup Maple Syrup
- Salt and Pepper to taste
- 2 large Apples (I prefer Honeycrisp)
- 1 Med. sweet onion (I use Vidalia)
- Optional: Thyme sprigs for decoration when serving
Instructions
- Preheat oven to 350°
- Place the tenderloin into a baking dish fat side up and sprinkle with salt and pepper. (I prefer Cracked Black pepper from a peppermill. See my Recommended products)
- Stir together the brown sugar and mustard then cover the pork tenderloin with it.
- Peel and cut the apples and onions into big slices
- Place the sliced apples and onions around the pork tenderloin in the baking dish
- Drizzle the maple syrup over the apples and onions then lightly over the pork tenderloin
- Cover with a tent of aluminum foil
- Bake on the center rack for about 50 min. to an hour. Pork is done when the internal temperature reaches 145°. Check with a meat thermometer. Remove the foil tent for the last few minutes of cook time.
- Remove from the oven and allow to rest 10 minutes before slicing.
- Serve and enjoy
Notes
Allowing meat to rest a while before slicing keeps the juices in the meat.
Yellow mustard works fine when blended with brown sugar to baste pork. If you prefer Dijon, that is fine too.
