What is a Sheet Pan Dinner
Sheet Pan Dinners have been all the rage for quite some time. My Sausage and Vegetable recipe is a great place to start if you are just experimenting with them.
A sheet pan dinner is an entire meal cooked on a sheet pan in the oven. It includes protein and vegetables with similar cooking times. It’s an easy dinner recipe cooked in a single layer.

What Are Sunchokes
Also known as Jerusalem Artichokes, Sunchokes are a thin-skinned root crop with a nutty taste. They are similar in consistency to a potato and a good source of Iron, Potassium, and Fiber but not good for a low-carb diet.
Try them. You might be surprised how tasty they are and how similar to white potatoes they are. They were super fresh totally delicious and easy to cook with a great flavor.
Ingredients
This versatile recipe uses root veggies paired with smoked sausage. Scroll down for recipe variation ingredients you can substitute for your liking.
- 1 Tbsp. Italian Seasoning
- 1 Tbsp crushed Thyme
- 2-3 Tbsp. Olive Oil
- 1 Large Yam or Sweet potatoes
- About 2 lbs. Sunchokes
- 1 Med. Red Onion
- 2 lbs. Smoked Sausage
Directions
Step 1
Line a large sheet pan with aluminum foil and spray with non-stick spray or line the pan with parchment paper.
Step 2
Peel and cut up the Yams and Sunchokes into bite-size pieces. Cut the onion into thick slices and cut the sausage into bite-size rounds.

Step 3
Add 1/2 the vegetables into a large Ziploc bag then drizzle with the Oil (you will be doing these same steps with the other half of the vegetables)
Step 4
Sprinkle with 1/2 seasonings and toss the vegetables around in the sealed bag so they are evenly covered with oil and seasonings.
Then repeat Steps 3 and 4 with the remaining half of the veggies. We do one half at a time so all of the vegetables are well and evenly coated.
Step 5
Spread all of the vegetables out evenly on the prepared sheet pan and then add the cut sausage rounds. Bake at 375ยฐ for about 35-40 minutes or until the vegetables are fork-tender. Serve and enjoy!
How To Chop Vegetables For A Sheet Pan Dinner
Peel the skin off before cutting and chopping. This is of course optional and it depends on which vegetable we are talking about. For this recipe that would be the Sunchokes and the Yams. I prefer to peel them both.
Lots of folks wash the sunchokes and do not peel them because it’s a bit of a pain to do just because they are so small and knotty. Personally, we like them better peeled so that is what we do. If you plan to wash and chop without peeling, use a good vegetable brush like this one.
Cut large vegetables like the yams into manageable pieces before cutting them into smaller bite-size pieces.ย
Now cut the peeled and chopped vegetables into bite-size pieces as near the same size as possible. Smaller chopped pieces will cook faster. We want all of our ingredients to get done about the same time so the size you cut your veggies is important. Make them as similar as possible.
Optional Vegetable Substitutions
You may like to try some different veggies. It’s all about the cooking time with this sheet pan recipe. The root vegetables tend to get done about the same time so let’s stick with those for our vegetable options in this recipe.
- Carrots
- Parsnips
- Turnip root
- Beets
- Russet Red or White potatoes
The best part of this sheet pan dinner with sausage is the easy clean-up. I line my baking sheet with aluminum foil so I just toss that in the trash. The pan doesn’t have to be scrubbed. If you’re lucky, it might fit in the dishwasher.

Pairing smoked sausage with Yams, Red onions and Sunchokes creates a fiber rich and tastefully delicious easy weeknight meal. Easy clean up with this particular sheet pan dinner. Everything is cooked right there, no extra bowls, pots or pans.
