Along with this week’s Menu Plan I’m sharing a simple two ingredient recipe for Lemon Pepper Baked Tilapia.
We have a mixed bag on the menu plan this week with summer and fall recipes. We are really trying to say goodbye to summer but with temps still in the 90’s, it’s hard.
We’re having some good Old Fashioned Southern Hoppin John and we love it so much we’ll be having the leftovers on Monday!
If you’ve been around our Menu Plans very much, you know by now that I enjoy cooking a meal one day that’s still good and sometimes even better the next day! Hoppin John is one of those meals and it’s easy on the budget too!

There are so many ways to bake fish. As a lover of lemon pepper, my hubby always enjoys this Lemon Pepper Baked Tilapia especially with California vegetables on the side. I cook frozen vegetables, following the directions on the bag and they are done in about 20 minutes. Rolls from the deli make this meal complete.
This weeknight meal is on the table in under 30 minutes!

Ingredients

- Preheat oven to 350°
- Line a baking pan with foil and spray with non-stick spray.
- Place fish on the pan and sprinkle each one with 1 Tbsp. of Lemon Pepper. You may use less if desired.
- Bake uncovered for about 15 to 20 minutes until done. Cook time depends on the size of your fish. Fish will be white and flaky when done.
- Serve and enjoy!

We want burgers on the menu again before summer is over. I canned some of this delicious Tomato & Red Onion Jelly so we are having these burger with no bun. I will make a baked potato to go with them with all the fixings.
My hubby came up with the most delicious Alfredo sauce recipe years ago. You can’t beat made from scratch for authentic flavors! We are having our Chicken & Cheese Stuffed Alfredo Ravioli tonight and I can’t wait!
We keep our Italian butter seasoning ready made in the cabinet so we’ll have some rolls with Italian butter with this meal and it will be like a date at the Italian restaurant!
Our first pot of Chili for the season! I know it isn’t quite fall just yet but who cares, we want chili! I make Crockpot Blackbean Chili and it’s scrumptious so I will be sure to make enough for Saturday too!
Do you prefer crackers or cornbread with your chili? Every family has their own Chili traditions. We’ve been having pimento cheese sandwiches with our chili for years and can’t imagine that meal any other way but we are only having crackers this time! We may start a new tradition. Chili is good with oyster crackers too!
Dinner is leftover Black Bean Chili any I may even make cornbread to go with it today but I’m not making any promises.
Since the meal is already prepared, I’m planning a dessert treat! I don’t make these Biscuit Donuts often but when I do, they always disappear quickly.
This week’s menu is fun and flavorful with fish, burgers, Alfredo, Hoppin John, Chili and even a dessert!
