Menu Plan #31 Leftovers Stretch The Budget
Leftovers stretch the budget on our Menu Plan #31. I don’t know about you but budget stretching becomes an regular exercise this time of year for me!
Chicken and Dumplings are always a good Sunday dinner at our house. This recipe has only 7 ingredients and instructions for freezing the extra broth. You will be needed lots of chicken broth for Thanksgiving preparation so now is a good time to start that process.
My hubby always leave work a few minutes early if he knows I’m making this Jazzed Up Meat and Potato Casserole for dinner. I always make a big casserole dish full so we can enjoy the leftovers the next day. We enjoy crescent rolls with this dish.
Leftover Jazzed Up Meat & Potato Casserole. To make it interesting, we will have either biscuits or Hawaiian rolls instead of the crescent rolls we had last night.
I get just as excited about my Two Meat Two Cheese Baked Spaghetti and Meatballs as my hubby does the Jazzed Up Meat and Potato Casserole. There will be leftovers for tomorrow to so that is always nice!

Breakfast for supper is a nice treat this time of year! My hubby is the cook for all but the grits. I really need to teach him to make grits. The menu includes; grits, scrambled eggs, sausage, biscuits and orange juice.
We only prepare four meals and enjoy six with our budget stretching leftover menu plan this week and to make it even better they are all one dish dinners except one.
