How To Debone Canned Salmon
A simple step-by-step guide to remove the large bones from canned salmon before cooking. Use this guide for preparing canned salmon for fried salmon patties.
I have been removing the large bones from canned salmon for many years when I cook Fried Salmon Patties. This process is easy and takes only a couple of minutes to complete.
My Fried Salmon Patties recipe is an old-fashioned thin and crispy patty, shallow-fried for an easy weeknight dinner.
The goal is to remove the large bones in the spine of the canned salmon. I also like to remove as many of the smaller, thin bones as I can. Some folks leave those because they are thin and soft. I prefer to remove as many as I can.

First
After opening the can, drain the liquid.
Notice the spines in the can before you dump out the salmon. This particular can has 2 sets of spines. Sometimes, you might find that a can of salmon has only a few bones, and sometimes it might have two spines like this can.

Second
Gently slide the salmon onto a plate so that it remains in one whole piece. You don’t want the whole thing to come apart just yet because then you would be digging for bones all over the place. It doesn’t look very appetizing right now, but hang in there!

Last
Gently pull apart the salmon where the spine is located, which will expose the entire spine. Use your fingers or a spoon to scoop out all of the bones together. Repeat with the other spine if your can has two spines.
Next, use a fork to flake apart the salmon and find any remaining large bones.
Now you can make these Fried Salmon Patties for dinner.
