You have heard of Two Bite Brownies, let me introduce you to my Two Bite Bar Cookie! Yes, I know some folks could eat these in one bite but who would openly admit to that?

My hubby first made these delicious bar cookies for us years ago when he found a recipe in a grocery store holiday cookbook. If you have been around here for long, you know he enjoys baking for his family. His Strawberry Cake with Strawberry Buttercream Frosting is legendary among family and is required for all holidays, family reunions and even birthday celebrations upon request.

Santa enjoys cookies of all varieties so be sure to leave some out for him on Christmas night with a cold glass of milk but not before stashing away plenty for the family to enjoy of Christmas Day.

THREE STEPS TO MAKE

There are three steps involved in making these Christmas Bar Cookies but do not be intimidated because only one of those steps involves the mixer and baking in the oven and that is the crust.

The scrumptious top layers are created by melting the candies in a saucepan on the stove and then pouring over the crust. You got this!

Chocolate Caramel Pecan Bar Cookies

Christmas Cookie Recipe for Chocolate Caramel Pecan Bars. The very best Bar Cookie ever for pecan lovers

These Chocolate Caramel Pecan Bar Cookies are the perfect combination of nutty crunch paired with favorite sweet flavors all on a soft buttery crust.

Prep Time 30 minutes
Cook Time 20 minutes
Additional Time 1 hour
Total Time 1 hour 50 minutes

Ingredients

  • CRUST
  • 1/2 Cup powdered sugar
  • 1/2 Cup unsalted butter, softened
  • 1 Tbsp. Whipping cream
  • 1 Cup sifted All-Purpose flour
  • FILLING
  • 24 Caramels unwrapped
  • 1/3 Cup whipping cream
  • 2 Cups Pecan halves
  • TOPPING
  • 1 tsp. unsalted butter
  • 1/2 Cup good quality milk chocolate chips
  • 2 Tbsp. Whipping Cream

Instructions

Preheat oven to 325°

Grease a 9" or a 9 x 13 baking pan.

In a medium bowl, combine powdered sugar, 1/2 cup softened butter and 1 Tbsp. whipping cream. Blend together well using mixer on low to medium.

Add in the 1 Cup of flour and mix just until crumbly.

Dip your fingers into a small amount of flour and then press the Crust into the baking pan. Flouring your fingers will help spread the mixture more easily as the mixture will be slightly sticky.

Bake at 325° for 15 to 20 minutes just until firm to the touch but not golden.

In a small saucepan, add the unwrapped caramels and 1/2 cup whipping cream. Cook over medium to low heat, stirring often until caramels are melted and mixture is smooth and creamy.

Remove from heat and add the Pecans. Stir well to coat the pecans with the caramel mixture.

Immediately spoon the caramel coated pecans over the crust.

In a small saucepan over medium heat, add the milk chocolate chips along and 1 tsp. unsalted butter. Stir constantly until melted.

Stir in 2 Tbsp. whipping cream and continue to stir to blend well.

Drizzle over the filling.

Refrigerate for 1 hour prior to serving or until firm.

Cut into bars, serve and enjoy. You should be able to get about 24 bars.

Adams traces its beginnings back to Battle Creek, Michigan, when John A. Adams began making and selling his Green Plant Sarsaparilla extract, Adamur, in 1888. In 1905, he moved his family to Beeville, TX. At the time, most vanilla sold to pharmacies and was often labeled “Do not bake or freeze.” John A. Adams’ wife yearned for a flavoring that wouldn’t bake or freeze out. He announced that he could produce a better vanilla than the one his wife was currently using.

Working with just $6.71 worth of materials on top of an old icebox, John A. Adams discovered the formula he wanted. To test this product, his wife whipped up a cake for the family to try. “John, this is the BEST flavoring I have ever used,” she announced. “Well, that’s old man Adams BEST,” he responded.
