Cheesy Bacon Stuffed Sweet Mini Peppers

This cheesy bacon recipe is a delight to your taste buds with a combination of goat cheese and ricotta then topped with grated Parmesan! Lip-smacking deliciousness ahead!

The colors of the mini sweet peppers make an attractive dish for your table setting! I can even see these served as a Christmas party appetizer. It’s a plus that they are low-carb.

Ingredients

  • One bag of sweet mini peppers found in the produce section
  • Goat cheese
  • Ricotta Cheese
  • Fresh Parmesan Cheese
  • Thick Cut Bacon
  • Fresh Thyme
  • Salt & Pepper

Prepare the peppers

Begin by slicing the peppers in half then scoop out the seeds. Don’t toss those seeds! You can dry them out and plant your own peppers.

Leave the stem on for looks. We do not recommend eating the stem. It just looks cool.

After slicing the peppers and scooping out the seeds. Wash them under running water then pat dry with paper toweling. I like to lay mine out on paper towels with the open side down while I am preparing the stuffing.

Make the cheesy bacon stuffing

Brown and drain the bacon then crumble it. I use an electric food chopper for this step.

Mix all of the remaining ingredients except the Parmesan, together in a bowl and stir until well blended.

Broil not bake

Place your cut peppers on a baking sheet lined with parchment paper. I love using parchment paper because it makes clean-up so easy!

Fill each pepper with the cheesy bacon mixture then top with the shredded Parmesan cheese.

Broil for about 5 minutes or until the peppers and cheese is slightly charred. Check often. Ovens vary.

Cheesy Bacon Stuffed Sweet Mini Peppers

Cook Time: 5 minutes
Total Time: 15 minutes

A 15 minute low carb cheesy bacon appetizer or side dish. Perfect for game day or summer parties.

Ingredients

  • 1 Bag Mini Sweet Peppers (produce department)
  • 6 oz. Goat Cheese (softened)
  • 6 oz. Ricotta Cheese
  • 3 Tbsp. Fresh Thyme leaves, stems removed
  • 4 Strips Thick-cut bacon, cooked, drained and crumbled
  • Salt and pepper, to taste
  • 1 oz. Parmesan cheese, freshly grated

Instructions

Cut each pepper in half lengthwise, leaving the stem intact. Remove seeds and membranes from each pepper half. (you can dry the seeds for planting if you like)

Wash peppers and pat dry with paper toweling.

In a small bowl, combine goat cheese, ricotta cheese, thyme
leaves and cooked bacon, salt and pepper. Mix ingredients thoroughly.

Cover a rimmed baking sheet with parchment paper.

Fill each pepper half with the cheesy bacon mixture.

Sprinkle each stuffed pepper half with grated Parmesan cheese

Turn the broiler on to High setting

Pop the peppers under the broiler for approximately 5 minutes or until the cheese begins to brown and peppers start to blister.

Remove from oven and carefully place on a serving dish.

Serve immediately and enjoy!

This recipe is great for parties, game day, summer BBQ's, snacks and anytime. Also a nice summer side dish.
