PREPARE THE PEPPERS

Begin by slicing the peppers in half then scoop out the seeds. Don’t toss those seeds! You can dry them out and plant your own peppers.

Leave the stem on for looks. We do not recommend eating the stem. It just looks cool.

After slicing the peppers and scooping out the seeds. Wash them under running water then pat dry with paper toweling. I like to lay mine out on paper towels with the open side down while I am preparing the stuffing.

MAKE THE CHEESEY BACON STUFFING

Brown and drain the bacon then crumble it. I use an electric food chopper for this step.

Mix all of the remaining ingredients except the Parmesan, together in a bowl and stir until well blended.

BROIL NOT BAKE

Place your cut peppers up on a baking sheet lined with parchment paper. I love using parchment paper because it makes clean up so easy!

Fill each pepper with the cheesy bacon mixture then top with the shredded Parmesan cheese.

Broil about 5 minutes or until the peppers and cheese is slightly charred. Check often. Ovens vary.
