This moist and delicious Pumpkin Coffee Cake will not take hours in the kitchen to bake. It's ready in about an hour and made in the Crockpot. A delicious Fall dessert for Pumpkin lovers. Topped with a Pecan Streusal topping.

CROCKPOT TIP!

When baking in the crockpot, be sure to stretch a dish towel across the top and then place the lid on. The towel will absorb the excess moisture which tends to build up in the crockpot during the cooking time. This is a good trick for cooking anything in the crockpot but if you are cooking something for a long time, the towel will become wet and drip onto the counter. Experience is the best teacher!

Ingredients

  • 1 Box Cinnamon Streusel bread mix (I used this one)
  • 8 oz. canned pumpkin puree
  • ½ cup packed light brown sugar
  • 1 tsp. Allspice
  • ½ cup chopped pecans (optional)

The allspice combined with the pumpkin gives this coffee cake that fall flavor explosion we all love! Those crunchy pecans on top make it all the better. I like pecan halves but you can chop them more fine if you like.

A moist, tasty and easy Crockpot dessert perfect for your Fall guests.
Ingredients
  • 1 box cinnamon streusel bread mix (I used Betty Crocker)
  • 8 oz. canned pumpkin puree
  • ½ cup packed light brown sugar
  • 1 tsp. Allspice
  • ½ cup chopped pecans (optional)
Instructions
  1. Line the bottom of the crockpot with aluminum foil, coming up the sides just a bit (this will keep the bottom from burning)
  2. Spray the foil and crockpot with non stick spray
  3. Set crockpot on high heat
  4. Set the streusel mix aside from the boxed mix.
  5. Add all remaining ingredients together and stir well by hand
  6. Pour the cake batter into the crockpot
  7. Top with the streusel mix, spreading evenly across the top
  8. Top with the chopped pecans
  9. Cover the top of the crockpot with a dish towel and then place the lid on top of the dish towel. (this will absorb the excess moisture which builds up)
  10. Cook on high heat for approximately one hour.
  11. Cake is done when toothpick inserted into center comes out clean.
  12. Cooking times may vary depending on your crockpot.

  2. I had to buy mini pumpkins for my kids to paint in their classes and I was to use them to make something. This is perfect! My teenager and I are the only ones out of our family of 6 that like to eat pumpkin pie so I rarely make anything pumpkin but I hate for the mini pumpkins to go to waste. Thank you for sharing with #foodpornthursdays and I hope you will join us for our last one this week!

  4. So many things you can make in a crock pot which I didn’t know. I actually don’t have a crock pot now although had one back in the 80s. Thanks for sharing this yummy recipe with us at #WednesdaysWisdom and see you next time!

  5. It looks so moist and delicious! I’ve only made a chocolate molten cake in the crockpot, but I’m gonna give this one a try. I like that it only has a few ingredients and they are all fall favorites! Wish I had a piece for a late breakfast!

We enjoying hearing from you!
