This Easy Banana Bread Recipe has been in our family for many years. No mixer required, we stir with a spoon to blend the ingredients. Cinnamon and Nuts are optional but they sure are a good addition!

I have been making this particular recipe for Banana Bread for more than 30 years. The original recipe came from a church cookbook and we know those always have the best recipes!

The cookbook is falling apart from years of use. I don’t keep it with my growing cookbook collection. It’s special so I keep it tucked away where no one but me can find it. After we moved into our new home I was in quite the panic because I had packed it away so well for the move.

Nuts in your banana bread?

Nuts are optional in this recipe.

My husband loves lots of pecans in Banana Bread so my recipe is loaded with them. We live in Georgia and are surrounded by pecan orchards in our hometown and on the roads we travel.

Pecan trees grow very tall with long stretching limbs but they are delicate and will sustain damage during storm season.  Driving under a Pecan canopy on a Georgia back road is one of my favorite things about living in the South.

Pecans or Walnuts

You can use Pecans or Walnuts in this recipe. Since we pretty much always have Pecans on hand, I use those most often. Did you know that Walnuts help to maintain a healthier cholesterol? Yep and they are also rich in antioxidants. 

Pecans are loaded with vitamins and minerals! They are also high in fiber and help lower your LDL cholesterol.

Easy Banana Bread Recipe

An easy recipe for Made From Scratch Banana Bread. Cinnamon and Nuts are optional in this moist and delicious treat.

Prep Time 15 minutes
Cook Time 1 hour 5 minutes
Total Time 1 hour 20 minutes

Ingredients

  • 1 Stick Unsalted Butter, melted
  • 1 1/4 Cups Sugar
  • 2 eggs, beaten
  • 2 Cups Self Rising Flour, sifted
  • 1 tsp. Cinnamon
  • 1 tsp. Vanilla extract
  • 4 Medium ripe bananas, mashed
  • 1 Cup Chopped Pecans

Instructions

    1. In a large bowl add the sifted flour, sugar and cinnamon and mix to blend
    2. Peel and mash the bananas using a potato masher
    3. Melt the butter and pour into the mashed bananas
    4. Stir the beaten eggs and Vanilla into the wet ingredients and stir well
    5. Make a hole in the center of the flour mixture and pour half of the wet ingredients in.
    6. Stir with a large spoon to blend
    7. Add the remaining wet mixture and continue to stir
    8. Batter will be slightly lumpy with banana chunks.
    9. Add the nuts and stir.
    10. Pour the batter into a prepared loaf pan.
    11. Place into a preheated oven at 325°
    12. Bake about 60-70 minutes or until toothpick inserted into center comes out clean.
    13. Cool on a wire rack for 10 minutes before removing from pan.

Notes

OPTIONAL: You can skip the Cinnamon and the Nuts.

You can use Walnuts instead of Pecans

Make muffins instead of a loaf by using a muffin pan with cupcake liners. Adjust the baking time to about 30 minutes. Check at 20 minutes to be safe as oven temperatures vary.
