How To Make The Best Ever Brown Gravy Meatloaf Recipe
This is a traditional meatloaf recipe made with ground beef, bread crumbs, and seasonings. Instructions include making it on a baking sheet and it can also be baked in a loaf pan.

Meatloaf Ingredients
- 1 tablespoon butter, softened
- 1 sweet onion, finely diced (optional)
- 2 pounds of ground beef
- 2 large eggs, lightly beaten
- 1 teaspoon dried oregano
- 1 tablespoon Worcestershire sauce
- 2 teaspoons dijon mustard
- 1 cup plain bread crumbs
- 1 ½ teaspoons salt
- ½ teaspoon black pepper
- ½ cup sour cream
Gravy Ingredients
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- ½ teaspoon onion powder
- ¼ teaspoon garlic powder
- Salt and black pepper, to taste
- 1 (14.5 ounces) can of beef broth (beef stock)
- 1 tablespoon tomato paste
- 2 teaspoons Worcestershire sauce
- 2 teaspoons Dijon mustard
Meatloaf Directions
Step 1
Preheat the oven to 350°. Cover a rimmed baking sheet with aluminum foil and then spray it with nonstick cooking spray. Set aside.

Step 2
Melt butter in a large skillet over medium-high heat and then add the diced onions. Cook slowly until the onions are soft and caramelized, stirring with a wooden spoon from time to time. Remove from heat.
The purpose of caramelizing the onions is so they will be tender and flavorful rather than crunchy in the meatloaf.
Set the skillet aside because you will use it to make the gravy. No need to wash it first.

Step 3
In a large bowl, mix all of the meatloaf ingredients including the sweet caramelized onions until well blended. I prefer to use gloved hands for this step. You can stir with a wooden spoon if you prefer.
Once the meat mixture is ready, shape it into a large loaf and place it onto your prepared baking sheet. You can make your meatloaf in a loaf pan if you have one. Be sure to spray with no-stick cooking spray first.
Meatloaf prepared on a baking sheet will come out with a crispy top and sides. When using a loaf pan to bake meatloaf, only the top will be crispy.

Step 4
Cove loosely with foil. Bake the meatloaf for about 45 minutes or until done. Uncover the meatloaf for about the last 15 to 20 minutes of cooking time to allow it to brown.
Allow the meatloaf to rest for about 10 minutes before pouring the gravy over to slice and serve. This will keep the juices in the meat.
Beef is done when the internal temperature reaches 165° when checked with a meat thermometer.

Brown Gravy Directions
While your tasty meatloaf is baking, make your delicious brown gravy.
Step 1
In a small bowl, mix together the flour, onion powder, garlic powder, salt, and pepper. Set aside next to the burner on the stove with the skillet.
Step 2
In the same skillet that you browned the onions in, melt the butter on medium heat. Immediately whisk in the dry ingredients.
Step 3
Stir constantly until smooth to remove any lumps. Now, add the beef broth stirring while adding. Continue to stir until the mixture is smooth and boiling softly.

Step 4
Now add the tomato paste, Worchestershire sauce, and Dijon mustard. Stir well and continue to cook on a low boil for a couple of minutes stirring often until thickened.
Gravy will begin to thicken quickly. You can remove your rich brown gravy from the heat and set it aside until ready to pour over the meatloaf. Be sure to save some for the homemade mashed potatoes too.

Step 5
Reheat the gravy if necessary and pour gravy over the delicious meatloaf. Slice and serve.

How Do You Know When Meatloaf Is Done?
Use a meat thermometer inserted into the center of the meatloaf. The temperature should reach 160° to 165° for ground beef. You could also slice into it to make sure the ground beef is no longer pink.
