Also, make the Creamy Cilantro-Lime sauce the day before and you will have cut down on your meal prep time when it is Fajita night! Simply store the sauce in the refrigerator with a lid or covered with plastic wrap.

You will want to keep this Fajita seasoning on hand in your pantry. You can also use this seasoning mixture for beef and other chicken recipes, Crockpot recipes and soups!
FAJITA SEASONING INGREDIENTS
- 3 Tbsp. Chili powder
- 1½ Tbsp. smoked paprika
- 2 tsp. onion powder
- 2 tsp. garlic powder
- 2 tsp. ground cumin
- ½ tsp. cayenne pepper
- 1 tsp. dried oregano
- 1/2 tsp. salt
Fresh cut Lime
CILANTRO-LIME SAUCE INGREDIENTS
- 1 Cup plain, full-fat Greek yogurt
- 1 Tbsp. homemade fajita seasoning
- 1 clove garlic, peeled and finely minced
- 2 Tbsp. fresh cilantro, finely chopped
- 2 Tbsp. fresh lime juice
- Salt and pepper, to taste
Chopped Rotisserie Chicken
CHICKEN FAJITA INGREDIENTS
- 2 Tbsp. Robust Olive oil
- 1 red bell pepper, sliced thin
- 1 green bell pepper, sliced thin
- 1 yellow bell pepper, sliced thin
- 1 orange pepper, sliced thin
- ½ small red onion, peeled and sliced thin
- 1 Tbsp. balsamic vinegar
- Salt and pepper, to taste
- 3 Cups rotisserie chicken, shredded
- 2-3 Tbsp. Homemade fajita seasoning
- ¼ Cup chicken stock
- ¼ Cup fresh cilantro, roughly chopped
- 1 Tbsp. Chopped green onion
- 2 Tbsp. fresh lime juice
- 1 head Romaine lettuce, washed and separated into individual leaves

Chicken Fajita Wraps with Creamy Cilantro-Lime Sauce
Pick up a rotisserie chicken from the Deli and save yourself some time. This hearty and delicious meal can be served on Romaine lettuce leaves for a lower carb version or on tortilla shells the traditional way.
Ingredients
- FAJITA SEASONING
- 3 Tbsp. Chili powder
- 1½ Tbsp. smoked paprika
- 2 tsp. onion powder
- 2 tsp. garlic powder
- 2 tsp. ground cumin
- ½ tsp. cayenne pepper
- 1 tsp. dried oregano
- 1/2 tsp. salt

Instructions
Begin by making the Fajita seasoning.
Prepare the fajita seasoning by combining all ingredients in a small bowl and stirring until thoroughly blended. Store any excess in an airtight container for later
use.
Next make the Cilantro-lime sauce
Combine all of the cilantro-lime sauce ingredients in a medium glass or other non-reactive bowl. Cover and place in the refrigerator until ready to use.
TIME TO MAKE THE FAJITAS
Heat the olive oil in a large skillet over medium-high heat. Add the peppers, onion, and balsamic vinegar to the skillet and season with salt and pepper, to taste. Cook for about 10-12 minutes or until the onions and peppers are tender.
Add the shredded rotisserie chicken, 2 Tbsp. of fajita seasoning, and chicken stock to the skillet and stir to combine. Cook until heated through and excess liquid is gone, approximately 3-4 minutes.
Taste and add additional fajita seasoning, if desired.
Remove skillet from heat and stir in the cilantro, green onions, and fresh lime juice. Serve on individual Romaine lettuce leaves. Drizzle cilantro-lime sauce over.
Serve and Enjoy!

Make the Fajita seasoning to keep on hand.
Prepare the Cilantro-Lime sauce the day before making this meal and store in the refrigerator. The flavors will marinade and you will save time preparing the meal the day of.
Serve on flour tortilla shells instead of Romaine lettuce if you like.
