Cheesy Mashed Potato Topped Meatloaf Recipe
This recipe for Cheesy Mashed Potato Topped Meatloaf is inspired by the popular Christmas movie, A Christmas Story.
Make this classic meatloaf recipe but turn it into a delicious meal by topping it with homemade mashed potatoes then melting cheese on top.

Ingredients
You can make a standard meatloaf with simple ingredients you can easily find at the grocery store. Chances are excellent you already have most of these ingredients in your kitchen now.
- 2 large eggs, slightly beaten
- 1/2 cup ketchup
- Approximately 16 crushed saltine crackers
- 1 tsp. salt
- 1 tsp black pepper
- 2 tsp. onion powder
- 2 Tbsp. Worcestershire sauce
- 2 lbs. ground beef
- 4 Cups prepared Mashed potatoes (recipe here)
- 1 1/2 cups shredded sharp cheddar cheese

Directions
Step 1
Preheat the oven to 375°.
Crush the saltines in a small food chopper, like this, or place them in a large Ziploc bag and crush them with a rolling pin.
Step 2
In a large mixing bowl, combine the first seven ingredients and stir to blend well. Then combine ground beef with the mixture of seasonings and cracker crumbs.
You can mix the meat mixture with your gloved hands or a wooden spoon. Personally, I prefer using gloved hands to get the mixture combined well. I keep these gloves handy for kitchen use.
Step 3
Prepare a loaf pan with cooking spray or line it with parchment paper.
Press the meatloaf mixture into the loaf pan. Transfer your meatloaf to the preheated oven and bake for about 20 minutes.

Step 4
Remove from the oven and carefully pour off excess grease which accumulates from the ground beef. Return to the oven and continue baking until done about 30 more minutes. The internal temperature should reach 160°. This step helps to keep your meatloaf from being too greasy.
Prepare the mashed potatoes while the meatloaf is baking. Here is my homemade mashed potatoes recipe.

Step 5
Remove the meatloaf from the oven and let it rest for about 10 minutes. Carefully transfer classic meatloaf onto an oven-proof serving dish.
Then top with the mashed potatoes and sprinkle the potatoes with the shredded cheese.
Return to the oven until the cheese is melted, about 2-3 minutes. Serve and enjoy! Printable recipe card below.

I’m pretty sure I gained a few pounds just reading this haha!! Man this looks good – how can you go wrong with meat, potatoes and cheese! Can you believe I’ve NEVER seen this movie!? My husband loves it – I guess I better watch it this year. I had to smile when I saw the price on the ground beef (you’re probably too young to remember!) because when I used to buy it, it was the cheapest meat option and a 2 lb. package would be around 2.00!
