Sweet & Salty Strawberry Watermelon Salad

Watermelon is quintessential to summer and it isn’t a matter of if but when we will enjoy the sweet fruit. Make a Watermelon Salad, restaurant quality filled with flavors that compliment the fruit.
Making memories in the summer includes time in the kitchen. Cookware and serving dishes often have stories to tell, don’t they! My serving dish for this watermelon salad is one of five in a set called Country Kids Collectors Recipe Plates sold by Watkins products back in the 1980’s. There is a recipe on the back of each plate. I enjoy serving this watermelon salad in the wide shallow bowl rather than in a deep bowl but it will work either way.
Watermelon Salad Ingredients
- 2-3 Cups cubed, seedless fresh cut watermelon
- 1/4 Cup Feta cheese
- Candied pecans, here’s the recipe
- 1/2 Cup thin sliced Red onion
- 1-2 Cups iceberg lettuce
- 5-6 fresh strawberries, sliced thin
- Raspberry Walnut Vinaigrette, optional
How to make Strawberry Watermelon Salad
Rinse the lettuce and allow it to dry on paper toweling while you prepare the other ingredients.

Make the candied pecans and set aside. I use this recipe. You will want to hang onto this recipe for salads and snacking. These make a nice treat at Christmas parties too.

Cut the watermelon in half and then half again so you have four quarters. Then using a long knife, slice through the fruit to make your cubes. Now you can easily slide off all the cut pieces into a large bowl. This is the quick and easy way, if you are planning a party and want an even prettier dish, use a melon baller for this summer fruit salad.
Place the lettuce in the bottom of your serving dish. Top the lettuce with watermelon, then sliced strawberries and red onion.
Now add the candied pecans and finally top with the feta cheese and it’s ready to serve. Drizzle with Raspberry Walnut Vinaigrette if desired. This salad is quite delicious without a dressing but it’s also good with it.

For best results serve this delightful dish fresh and cold to your guests. It’s a great idea to serve on a summer movie night at home or a hot summer day.

Strawberry Watermelon Salad Easy Recipe
A sweet and salty watermelon salad ready to serve in about 20 minutes. The perfect side dish for a summer bbq.
Ingredients

Zan, the salt is sprinkled over the pecans when they come out of the oven. I will go fix that on the recipe, thanks for asking, I would not have realized that I left that out! Please give this salad a try and let me know how you like it 🙂
