One of the highlights of the holiday season is the office cookie party where my husband works! I always enjoy the photo’s he shares with me of all their office decorations and especially the food at the party.
This year I decided to help him out just a bit. He doesn’t really need help, he is quite the baker himself. Some of his popular dessert recipes are on the blog. Because he is such a good cook himself, I decided to step up my game just a little bit for his cookie recipes this year. I headed straight over to the Betty Crocker ™ website for recipe ideas. I’ve trusted Betty Crocker™ to help me cook for more years than I can honestly recall.
I found two recipes which are perfect, printed them and headed out to the Publix for ingredients.

My first recipe is called Bacon Pecan Chocolate Chip Cookies. I adapted the Bacon Pecan Cookies recipe I found on the Betty Crocker™ site. Dare to be different! There is always competition at cookie exchange parties! The bacon adds the perfect combination of sweet and salty to this recipe to make this recipe a winner every time!
Bacon Pecan Chocolate Chip Cookies
- 1 pouch (17.5 oz.) Betty Crocker™ Chocolate Chip Cookie Mix
- 1/2 cup butter, softened
- 1 egg
- 1 Tbsp. water
- 1/2 cup chopped pecans
- 1/2 cup chopped cooked bacon
Preheat oven to 375°. In medium bowl, stir (by hand, no mixer needed) cookie mix, butter, egg and water until soft dough forms.
Stir in bacon and pecans.
Drop dough by rounded tablespoonfuls 2 inches apart onto an ungreased cookie pan.
Bake approximately 11 to 13 minutes or until light golden brown. Cool 1 minute before removing from the pan to a cooling rack.
My second recipe is also adapted from one I found on the Betty Crocker™ site. Peanut Butter Cookie White Chocolate Truffles
- 1 pouch (17.5 oz.) Betty Crocker™ peanut butter cookie mix
- 3 Tbsp. vegetable oil
- 2 tsp. water
- 1 egg
- 4 oz. cream cheese, softened
- 1/2 cup creamy peanut butter
- 2 cups white baking chip morsels
- 2 Tbsp. shortening
- Betty Crocker™ Red Sugar sprinkles
Heat oven to 375°.
Make cookies according to package directions. Cool completely.
In the food processor, process the cooled cookies until they are find crumbs. This is easier to do when you do half of the cookies at a time.
Combine all of the crumbed cookies in the food processor along with the cream cheese and peanut butter. Process until the mixture is well combined and can be formed into balls.
Shape into 1 inch balls and place onto a waxed paper lined cookie sheet. We were able to get exactly 48 balls. Refrigerate for at least 15 minutes.
In medium bowl, microwave the white baking morsels and shortening uncovered. Start with 30 seconds then stir, another 30 seconds then stir. It will likely take about 90 seconds. Stir until smooth.
Dip and roll the chilled cookie balls in the melted morsels using 2 forks covering well. You should have plenty of melted morsels to cover them all well. Place the truffles back onto the lined cookie sheets and return to the refrigerator for at least 15 minutes. Store covered in the refrigerator.
Baking is done. It didn’t take long at all thanks to the ease of Betty Crocker™ Cookie Mixes! All packed up and ready to go to the office cookie exchange party!
I used holiday tissue paper to line the Ziploc containers. The pretty paper will serve as a festive touch to serve the cookies right out of the Ziploc containers! Easy peasy! I printed the spread the cheer labels from the Betty Crocker™ site. (I told you, they have everything you need for cookie season!)
