Homemade Chicken Noodle Soup Easy Recipe

This Homemade Chicken Noodle Soup is one of the easiest soup recipes you can ever make. A beginner cook can make this dish and kids in the kitchen can too.

The first food we think of in the dead of winter is a bowl of homemade chicken noodle soup. Mom’s have warmed the hearts of their families and nursed a cold and sore throat with this dish for eons.

My recipe is a double noodle made from scratch with carrots, celery and chicken broth. Yummy yummy in my tummy!

For some reason you can get those carrots and celery vegetables into your kids bellies in a big bowl of the best chicken noodle soup when they won’t eat it any other time.

Ingredients in Homemade Chicken Noodle Soup

  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 tsp. Olive Oil
  • 4 cups Chicken broth, see how to make your own here
  • 2 cups dry spaghetti noodles broken into pieces
  • 1 teaspoon Salt
  • 1/2 teaspoon black pepper

How to make this easy homemade chicken noodle soup

Step 1

Heat oil in a large soup pot or Dutch oven.

Add the diced carrots and celery and cook for about 3 or 4 minutes or until the vegetables begin to soften, stirring occasionally.

Step 2

Add the chicken broth to the vegetables and bring to a full boil on medium-high heat.

Preferably you will use homemade chicken broth, instructions for making are right here.

Stir in the salt and pepper.

Step 3

Now stir in the noodles and cook for about 8 minutes.

One of the things that make this the best homemade chicken noodle soup is that I doubled the noodles for a more hearty meal.

Step 4

Remove from the heat and allow the noodles to continue soaking up the liquid until the noodles are tender.

Variations

This classic chicken noodle soup is a great recipe as is but I know sometimes we need and want a little more.

Make homemade broth

If you want to make fresh chicken broth for your soup base you will begin by boiling the meat. You can boil a whole chicken, boneless chicken breast or chicken thighs. Be sure you have added enough water to the pot so you have a yield of 4 cups broth to make the soup.

If you make your broth to begin this soup, use the leftover chicken to make a Chicken Vegetable Casserole or a Homemade Chicken Pot Pie.

Add Meat

If you are like me with meat loving men sitting at your dinner table, add some chopped or shredded chicken to the pot. Traditional chicken noodle soup has very little to no meat so don’t go overboard with it. Rotisserie chicken is good in this soup.

Add Herbs

A great way to customize your flavors is by using fresh herbs. Basil, Oregano and Thyme are good in this dish. Learn more about growing your own cooking herbs at home.

Chicken bouillon cubes

Want skip the chicken and make bouillon stock? Go right ahead. This easy soup recipe is quite versatile so use what you have on hand. Chicken bouillon cubes can be substituted for boiling chicken to make stock or if you don’t have chicken broth on hand.

We enjoy using spaghetti noodles broken into pieces. It seems more like an authentic chicken noodle soup. Some folks enjoy making homemade egg noodles. Others prefer buying egg noodles from the grocery store. It’s mostly a matter of personal preference.

Ingredients

  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 1 tsp. Olive Oil
  • 4 cups Chicken broth
  • 2 cups dry spaghetti noodles broken into pieces
  • Salt to taste
  • Pepper to taste

Add the cubed carrots and celery and cook for about 3 or 4 minutes or until the vegetables begin to soften, stirring occasionally.

Add the chicken broth to the vegetables and bring to a full boil.

Stir in the salt and pepper.

Now stir in the noodles and cook for about 8 minutes.

Remove from the heat and allow the noodles to continue soaking up the liquid until the noodles are tender.

Serve hot with saltine crackers for a hearty meal
