Preheat your oven to 350°.
Add the ground beef, onion, and bell peppers to a large skillet over medium high heat. Cook until the meat is browned and drain the grease.
Add the beef mixture back into the pan and stir in the garlic, ketchup, chili powder, tomato paste, Worcestershire sauce, brown sugar and water. Stir to combine.
Bring to a low boil and simmer over medium to medium high heat until the sloppy joe mix thickens.
While the sloppy joe mixture simmers, prepare the baking pan with the Texas toast. Spray the pan with non-stick spray. Lay out the Texas Toast in a single layer, side by side on the pan.
Bake the bread for about 3-4 minutes, just until the bread thaws and begins to soften. Then remove the bread from the oven.
Use the back of a spoon to make a large indention in the center of each piece of Texas Toast.
Now spoon a big dollop of the hot Sloppy joe mixture onto each slice of Texas Toast. Then top with a slice of Colby jack cheese.
Place the pan back into the oven until the cheese melts, about 3-4 minutes. Serve and enjoy!
