Preheat the oven to 350° and spray a large baking dish with non-stick cooking spray.
Place the leg quarters into the prepared baking dish in a single layer. Sprinkle the leg quarters with Salt, Pepper, and either Sage or Poultry seasoning. Sprinkle heavily with Paprika last. Cut the butter into 8 small pieces so you have 2 pieces of butter for each leg quarter. Then dot the chicken with the butter.
Place the baking dish on the middle rack in the oven and bake covered for about 30 minutes. Then remove the foil and finish baking for about another 15 to 20 minutes or until the chicken reaches 165°. Removing the foil will allow the skin to become crispy.Serve with your favorite side dishes and enjoy!

The melted butter and paprika together will give the skin that crispy brown texture and flavor we love. I learned the butter pat trick when I was a manager at a Meat and Two Restaurant years ago.
