Zucchini Red Potatoes and Chicken Foil Pack Dinner

  • 2 Fresh Zucchini
  • 1 container of Cherry Tomatoes
  • 2 Fresh Squash
  • 3 Ears of Fresh Corn
  • 3 or 4 small Red Potatoes
  • Salt and Pepper to taste
  • 9 chicken drumsticks
  • 1 packet of vegetable seasoning mix
  1. Lay out two large pieces of aluminum foil across each other like a cross.
  2. Wash the fresh vegetables.
  3. Shuck the corn and remove the silks.
  4. Slice the zucchini and squash into bit size slices.
  5. Cut the potatoes into fourths or bite size chunks
  6. Place the zucchini, squash and potatoes into a resealable food storage bag.
  7. Sprinkle the seasoning packet into the bag and shake to cover all pieces of veggies.
  8. Begin layering the food onto the foil pieces beginning with the vegetables.
  9. Salt and pepper the drumsticks as you add them to the top of the food.
  10. Pull the edges of the top piece of foil up and roll to seal leaving the ends open for steam to escape.
  11. Pull the second piece of foil up over the open ends and roll to seal loosely.
  12. Place onto a large baking pan side by side.
  13. Bake in preheated oven at 400° for about 45 minutes or until chicken reaches 165°
  14. Can be eaten from the foil or removed to a plate.
  15. Serve and enjoy!
