Homemade Lemon Cheesecake

Ingredients
  • 1½ cup graham cracker cookie crumbs
  • 3 Tbsp sugar
  • ¼ cup butter, melted
  • 4 (8 oz) packages cream cheese, softened
  • 3 large eggs
  • 1 cup sugar
  • 2 tsp lemon juice
  • 1 tsp vanilla extract
Instructions
  1. Stir together first 3 ingredients;
  2. Press into bottom of a 10-inch springform pan.
  3. Bake at 350° for 8 minutes. Cool.
  4. Beat cream cheese, eggs, and 1 cup sugar at medium speed with an electric mixer until fluffy.
  5. Add lemon juice and vanilla extract and blend well.
  6. Pour into prepared crust.
  7. Bake at 350° for 1 hour. Cool on a wire rack.
  8. Cover cheesecake and chill at least 8 hours.
  9. Store in refrigerator up to 5 days, if desired.
  10. Remove sides of springform pan when ready to serve.
  11. Yield: 1 (10 inch) cheesecake.
