Cheesy Mashed Potato Covered Meatloaf

A mashed potatoes and meatloaf recipe reminiscent of our favorite Christmas classic, A Christmas Story.
  • 2 large eggs lightly beaten
  • ½ cup ketchup
  • Approximately 16 crushed saltine crackers
  • ½ tsp. Salt
  • 1 tsp. black pepper
  • 2 tsp. onion powder
  • 2 Tbsp. Worcestershire sauce
  • 2 lbs. ground beef
  • 4 Cups prepared mashed potatoes
  • 1½ Cups shredded sharp cheddar cheese
  1. Preheat oven to 375°
  2. Combine the first seven ingredients in a large bowl. Blend well.
  3. Add the ground beef and mix thoroughly.
  4. Prepare the loaf pan with non-stick spray.
  5. Press the meatloaf mixture into the loaf pan.
  6. Bake about 20 minutes then remove from the oven and carefully pour off the excess grease.
  7. Return to the oven until done, approximately 35 additional minutes or until internal temperature reaches 160°.
  8. Remove from oven and carefully pour off excess grease.
  9. Allow the meat to rest in the pan for approximately 10 minutes.
  10. Prepare the mashed potatoes while the meatloaf is cooking.
  11. After the meatloaf has rested for 10 minutes, carefully remove to oven proof serving dish,
  12. Top with prepared mashed potatoes.
  13. Sprinkle with the cheese.
  14. Return to oven until cheese begins to melt.
  15. Serve and enjoy!
