Grilled Chicken & Black Bean Warm Salad

A rib sticking flavor packed one dish warm salad.
  • 1 (15 oz.)can black beans, drained
  • 1 (15 oz.)can whole kernel corn, drained
  • 1 can diced tomatoes, drained (use your favorite flavored tomatoes such as Rotel)
  • 3-4 boneless skinless chicken breast
  • Salt & Pepper to taste
  • ¼ tsp. cayenne pepper (optional)
  • ¼ cupSour Cream
  • ½ cup Shredded Cheese
  1. Cut your chicken into bite size pieces and sauté in large skillet which has been sprayed with pan spray.
  2. Add the drained black beans, corn and tomatoes to the chicken, stir well on medium heat.
  3. Add the seasonings to the chicken and vegetables, stirring often.
  4. Cook about 10 minutes until thoroughly heated.
  5. Serve in bowls topped with shredded cheese and a dollop of sour cream with corn chips
