Chocolate desserts are the answer to a whole lot of life’s problems. It may not solve the problem but it at least helps you feel a little bit better. Did you know that 75% of chocolate candy purchased is by men buying it for women?

One of our family’s favorite recipes is my Mom’s chocolate cake with fudge icing which appears by request on most holidays. For those who want more cake and less icing, I developed this Chocolate Pound Cake and drizzled it with my Homemade Fudge!

Ingredients

Directions

I use a Bundt pan which has been in my kitchen for more years than I can remember. This one is very similar to mine. When you buy good tools, they will last you forever. Spending a few extra bucks can actually save you money in the long run.

1

Sift together flour, baking powder, salt, and cocoa. Then set aside.

Grease and flour your cake pan and preheat the oven to 350°.

It is still my preference to grease and flour cake pans. I have found it to be the best way to keep the cake from sticking to the pan. I use shortening for the greasing process.

2

Add shortening and butter into a large mixing bowl and beat on medium speed for 2 minutes or until creamy.

3

Gradually add sugar, pouring it in slowly while the mixer continues to blend the ingredients.

4

Add the eggs one at a time while the mixer is still beating the batter.

5

Add the dry ingredients to the batter mixture alternately with milk beginning and ending with flour. Continue to mix at low speed while you are adding the dry ingredients.

Tip

It is best to add your dry ingredients a little at a time to avoid blowback. Experience is the best teacher.~wink

6

Add the chocolate extract and allow to mix for another minute.

7

Pour your chocolate cake batter into a 9 or 10-inch Bundt pan or tub pan which has been greased and floured.

Bake at 350° for about 1 hour and 15 minutes. Oven temperatures vary. The cake is done when a wooden pick inserted in the center comes out clean.

  1. I am just home from the hospital in which I had nothing to eat or drink for several days. I knew when I got home..one of the several, pound cake recipes I had pinned to try was gonna get made! This recipe was chosen..and it had to be divine intervention. The cake is fabulous..I only did 2 things differently. First I added a teaspoon of vanilla to the cake..just because I believe it enhances the chocolate flavor…and the second was…my half and half was out of date so I could not make your fudge glaze.. so I topped my cake with a chocolate ganache! Which seems the best sub I could find. We also were lucky in that we had churn our own vanilla bean ice cream one day last week and the whole churn full was stashed away in my freezer.. another divine intervention.? I am sure. This recipe is a keeper 110% sure. Do have one quick question. I think next time I am gonna use butter flavor Crisco..do you for see that being an issue? Thank you for sharing this!!!

    1. Scott, I have never tried using Butter Flavor Crisco in a cake but I’m game. Let me know how you like it when you do that. I’d like to know. So glad you enjoyed the cake. I’m sure the Ganache was just as fabulous as the Homemade fudge! What could be better than chocolate cake after a hospital stay!

  2. I’m making the cake this week to take to a family reunion. It looks delicious! I have one question and it is do you sift your flour before measuring? I’m from the old school of thought that flour needs to be sifted before measuring.

Thank you and I look forward to your response.

  3. I will try the recipe soon. I’m not sure if I’m missing something – but I don’t see the recipe for the Chocolate glaze.
    Please advise.

We enjoying hearing from you!
