Parmesan Chicken & Veggie Suddenly Salad

Dress up a box of Suddenly Salad to make it a whole meal with your personal favorite ingredients.

Salads are good any time of the year. We tend to think of them more in the summer but don’t limit yourself to only eating salads in the summer months.

Because they are so easy to prepare, I tend to purchase a few boxes of Suddenly Salad each summer. While I am not complaining about the Suddenly Salad as prepared, they can be enhanced in many ways to personalize your family’s taste.

The recipe I am sharing is one we recently enjoyed.

Parmesan Chicken & Veggie Suddenly Salad

  • 1 box of Suddenly Salad
  • 2 or 3 boneless skinless chicken breasts or tenderloins
  • 3 or 4 pieces of cooked bacon, crumbled
  • 1/4 cup chopped red, orange & yellow sweet peppers
  • 1/4 cup chopped red onion
  • 1/4 cup parmesan cheese
  • 1 tsp. lemon pepper
  • 1/2 cup Italian dressing

Spray skillet with non-stick spray. Cook chicken in a prepared skillet and sprinkle with lemon pepper while cooking. Cut cooked chicken into bite-size pieces. Cook and drain the bacon, crumble or chop in a food chopper.

Prepare Pasta according to package directions. Do not use the seasoning package.

Stir all ingredients together after preparation. Pour the Italian dressing over all, and stir well. Refrigerate for several hours.

Serve on a bed of lettuce, and sprinkle with parmesan cheese.

Chicken and Veggie Suddenly Salad Recipe

Ingredients
  

  • 1 box Suddenly Salad
  • 3 bonelss and skinless chicken breast
  • 4 pieces cooked bacon, drained and crumbled
  • 1/4 cup chopped red onion
  • 1/4 cup grated parmesan cheese
  • 1 tsp. lemon pepper
  • 1/2 cup Italian dressing
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 cup chopped red, orange & yellow sweet peppers

Instructions
 

  • Spray a large skillet with non-stick spray.
  • Cook the chicken in the repared skillet and sprinkle with lemon pepper while cooking. Remove the cooked chicken to a plate and cut into bite size pieces.
  • Cook and drain the bacon, crumble or chop in an electric food chopper.
  • Prepare Pasta according to package directions. Do not use the seasoning package.
  • Stir all ingredients together after the chicken and bacon are prepared. Pour the Italian dressing over all, stir well. Refrigerate for several hours.
  • Serve on a bed of lettuce, sprinkle with parmesan cheese.
