Those little jars are just so stinking cute!
My original recipe called for 3-4 tsp of cinnamon but I thought that was too much so I cut it to 2 tsp.

INGREDIENTS

6-7 lbs. of your favorite cooking apples (I used 3lbs. Honey Crisp and 4 lbs. Gala)

2 Cups Sugar, white granulated 2 Cups Brown Sugar

2 Tbsp. Vanilla extract

2 Cups Apple Cider Vinegar

2 tsp. Cinnamon Peel, core and slice the apples in fourths.

Directions

Place sliced apples in the Crockpot along with the vanilla.
Sprinkle the granulated sugar over the apples.
Cook on low for about 6-8 hours or until nice and tender. They should be tender enough to mash. You may want to start on high for about an hour then turn down to low.
Once your apples are tender enough to mash, stir in brown sugar, vinegar and cinnamon. Continue to cook on low for about another 4 or 5 hours, stirring occasionally.
Mash them well with the potato masher or you may want to run them through a food processor if you prefer no lumps at all.
After mashing, adding the brown sugar, vinegar and cinnamon and simmering 4 hours, you are ready to can.
You can now put your Apple Butter into canning jars for the canning process. If you do not wish to can your Apple Butter, simply store in airtight containers and keep in refrigerator.
