

Smoked salmon cucumber appetizers are good for any occasion any time of the year. They are especially good for holiday parties as the red and green colors match the season. A big plus is no cooking involved. Simply mix and assemble.

How To Make Smoked Salmon Cucumber Appetizers
There is no cooking involved, just mixing, stirring and putting these little tasty jewels together.

Begin by using a large bowl to combine the cream cheese, lemon zest, lemon juice, fresh dill, salt and pepper and capers if using those. After blending well, set the bowl aside while you prepare the cucumbers.
Preparing The Cucumbers
Slice off the ends of each cucumber. Peeling the skin is optional. Thinly slice the cucumbers lengthwise using either a vegetable peeler or a mandolin slicer. I love using my Mandolin slicer as it makes all jobs quick and easy but you must be very careful and wear chopping gloves.
You want your cucumbers to be as thin as you are able to get them.

Spread either waxed paper or parchment paper on the counter for easy clean up after preparation.
Spread a thin layer of the cream cheese mixture along the length of each cucumber slice. Add a little extra bit of filling at one end to help secure the shape once it is rolled up.


Top the cream cheese mixture with the smoked salmon and tightly roll the cucumber. You can use pretty party toothpicks to hold these appetizers together if you need to. The roll ups should hold their shape just fine if your cucumbers are sliced thin enough.
Store in the refrigerator until ready to serve.
