With Menu Plan #51 we have planned a week of sandwiches, salmon and salad.
There is a couple of Budget Stretchers on this week’s menu and a pretty good variety. We only have a few more weeks of school baseball season and this week there are two games on the same night at the same time at different schools!
I always make a big bowl full of this salad so we can enjoy the leftovers the next day. This is one of those dishes which tastes better if you allow the flavors to marinade so make it early in the day.
Bacon Grilled Cheese and leftover Broccoli Bacon & Raisin Salad. We use turkey bacon for these sandwiches and originally added some homemade pepper jelly but you can use any jelly. Trust me on this, jelly on a grilled cheese is scrumptious.
I really don’t make Salmon Patties all that often and I don’t know why since both my hubby and I love them. We like ours thin and crispy.
A can of salmon is much less expensive than fresh meat from the meat counter which is why this is a Budget Stretcher meal for us.
This is one of my favorite warm weather meals. Sometimes we make it on the grill and sometimes I make it in the oven. Either way, it’s just yummy. The recipe is subjective to your personal preferences. I’ve even made it with broccoli and yams.
This meal is a great way to serve fresh vegetables.
No cooking for me tonight! The kitchen is closed. We’re going on a fun date night out to one of our favorite local hot dog restaurants, Nu Way. Then it’s off to the ball park. Our two oldest grandson’s have games at the same time at different schools.
