Week #48 of our Menu Plan is a little something different every night.
We do stretch our homemade meatballs into two nights for two completely different meals.
Winter is almost over. Chances are good that we will be skipping the soup most of the spring and summer when we switch to fresh vegetables and light fare. We have to get our favorite soups in one more time!
Crockpot Taco Soup is easily a favorite in our house! That combination of black beans, corn and tomatoes packs a yummy punch!
It isn’t all that often that my Swedish Meatball recipe graces our table. Although the meatballs are made ahead and kept in the freezer. If you have entertaining in your future, you might want to save our scrumptious meatball recipe!
If I am going to be making meatballs from scratch, you best bet there will be sub sandwiches on the menu! We usually have these the night after we have Swedish meatballs. Only because I make a double batch of meatballs for the freezer. My hubby loves meatball week at our house.
I pull this recipe out when my schedule is very busy and I just need something easy for a weeknight dinner. The only side I prepare is rice. We usually have some biscuits or Hawaiian rolls on hand to go with it.
I cannot even tell you how much I love cooking with apples and using cabbage as either a side dish our our main entree. Apples, cabbage and pork tenderloin go together like peanut butter and jelly in this recipe!
