Winter drags on yet have had more warm than cold days here in the south. We have decided to make Menu Plan #44 our Soup Week!
It’s going to be an easy week in the kitchen for me!
Monday:
Hoppin John is big Budget Stretcher with only 3 ingredients!

Tuesday:
With only 7 ingredients and the Crockpot involved, this is always a good meal at our house. We love the flavor combinations in our Taco Soup.
It’s a Budget Stretcher because it only uses 7 ingredients and will yield two meals for us.

Only 6 ingredients! I’m telling you, I love easy meals and this one is a winter favorite at our house.

Soup calls for some crackers or cornbread so we are having both this week. We enjoy tortilla chips with our Taco soup. I’ll be making some Waffle Iron Cornbread also.
Did you notice I’m only actually cooking three days! You have got to love leftovers, not just for the budget but for the ease of time in the kitchen too.
Dessert this week!
Since our menu is super easy this week, I’m going to make a dessert! My daughter has requested a Caramel Cake.

Can you come and cook for me? Lol. I did a week of freezer meals and while it sort of worked as a meal planning, I don’t have enough freezer space.
