It is time for some Winter Meals on our Menu Plan.
There may be a little more cooking going on some weeks than others and this is one of those weeks on our menu plan. We do have a few Budget Stretchers too.

Did you notice my big blunder last week? I numbered last weeks menu #39 and it was supposed to be #40. Oh well.
A nice hearty weeknight meal we enjoy is this classic from my child hood. Baked Chicken Leg Quarters with mashed potatoes and green beans. I am just going to be honest, I cheated with the Idahoan Applewood Smoked Bacon Instant mashed potatoes. We tried those recently when they were on sale and I had a coupon. They are really yummy so they have found their way into our winter pantry!
Our Crockpot Taco Soup recipe is seven ingredients of yummy goodness and we have not grown tired of it. I try not to cook it more than every few weeks but when a recipe is this easy and so good, well, it gets requested.

Shrimp Fried Rice is one of the meals my hubby makes. It is a budget stretcher for several reasons, we use a half pound of shrimp since we are cooking for two. He uses this seasoning and simply follows the directions on the back including the onions. We use canned peas if we don’t have frozen on hand.
Frozen shrimp is only $8 for one pound ready to eat at my grocery store on sale. That is pretty cheap and we got two meals from one bag of shrimp. which is what makes this meal a budget stretcher. I just put the other half back in the freezer for our Cajun Shrimp Burritos next week.
What better time to have breakfast for supper but a Friday night when you don’t feel like putting a lot of thought into dinner! Our menu tonight is Grits, Scrambled Eggs, Sausage and Biscuits. My hubby loves those Mary B thin biscuits.
