How did your first menu plan of the new year go? We did pretty good.
Winter Storm Helena dipped down into middle Georgia prompting us to stray from our Friday menu. It worked out well though because we had Homemade Vegetable Soup and I made enough for both days which is a real budget saver!
Fried Salmon Patties are easily a favorite at our house. They are especially frugal to prepare using ingredients which are generally in every pantry. Canned salmon is less than $3 per can making this meal a Budget Stretcher!
Taco Tuesday this week means Crockpot Taco Soup. It’s a Budget Stretcher since one big pot will feed us for 2 days plus my recipe only requires seven ingredients.
Leftover Crockpot Taco Soup and it will be even better today!
Two Meat, Two Cheese Baked Spaghetti & Meatballs is a Budget Stretcher even though our recipe has two meats. Both meats are inexpensive plus this is another of our premeditated leftovers dishes.
I love a menu plan that not only saves me money on our grocery budget but saves me time in the kitchen too. That’s exactly what we get with this weeks menu plan.
Monday: Southern Fried Salmon Patties
Tuesday & Wednesday: Crockpot Taco Soup
Thursday & Friday: Baked Spaghetti
